I was wondering how do I export my existing Shopify Theme (& All The Work I've Done) into Nicepage to make my website more customised or make updates?
Then also to export the code from Nicepage back into my Shopify account?

No, Nicepage does not have Shopify export option. You can export only WP, Joomla and HTML themes.
