I do this by using the Wordpress option "Order". Go to your list of pages & hover over the page name till you see this - https://prnt.sc/pwlqka - click on Quick Edit. Now you'll see the Order area https://prnt.sc/pwlrd2.
I order mine by the order they are in on the menu and I order by 10s so I don't have to go back and reorder everything if I add a page in between others. If you are using sub pages the order numbers start over. I always make the home page 0 (would be good if Nicepage would always do this).

If you have a decent amount of pages at the current time there is no logical way it shows the pages, so having them filtered alphabetically or by latest modified etc would be a big bonus...also it would be nice to see the option to have the pages show as you currently have as a large thumbnail OR just a text listing :)

You mean that you need to sort the pages within one site? Or sort the sites by the name in your dashboard?
