Hello,
The Text element, which is a single paragraph, does not have the paragraph spacing option because this parameter usually uses the margin property on the CSS level. You can control the position of the Text element relatively to other elements by simply moving it in the editor.

But in the case of a long text how do you suggest me to behave? I cannot guess to separate each text paragraph in a separate block. Am I wrong?
BTW: I am a (too long) experienced professional IT and I saw uncountable software in my life. Nicepage is probably the most ingenious user interface I had the opportunity to say, exceptionally intuitive and powerful (but the paragraphs..:) .)

Thank you for your clarification and for your patience.
To explain it more precisely:
Each Text element is always treated as one paragraph, even if you add multiple line breaks inside it.
<p></p>
Inside this block, the text may contain line breaks <br>, but it will still remain one single paragraph.
The parameter paragraph spacing works like external margins (top and bottom) for the whole paragraph.
It does not increase the distance between text lines inside one paragraph.
Internal spacing in this case depends only on the line height.

So what do you suggest for a normal multi-paragraph text, to have a little extra space among the paragraphs, like we use to do almost everywhere?
