Yes, I tried that but changing the color has no effect - see red arrows in one screenshot.
Moreover, there is a text that cannot be changed indicating "grey text in the empty field" - see red rectangle in the other screenshot.

Hello Rotem,

The color can be changed but you cannot select the darkest shade of the color as the text in the placeholder should be lighter. Text for a placeholder can be changed.

It seems that there a certain amount of grey kept and Google "doesn't like" the resulting contrast between text and background and this has a negative effect on its accessibility score, but I guess I can live with that.
