The email option is for a registered user with a license. This is why the Leads option is connected to your account, and Email as the Submit option. Link to the leads will be sent with submissions to the verified email in the contact form and you will receive notices in your Leads as site administrator. An email like noreply.nicepage.io cannot be changed.
Sure, you can change the email to receive the form submissions (where to) but you cannot separate it from the administrator's account. The monthly form submissions counter per site is used for this type of form submission.
If you do not want your licensed email to be used, you can use another submit option. For sites created as further export to HTML, there are URL or Mailchimp options, as well as Send email with PHP script.
If you sell the theme, it shouldn't be hosted under your account, your client should use his/her own license to verify email.
