Tell me how to make the VirtueMart categories displayed?
I want to display a list of categories from the top level of everything.
Also interested in how to display the category description in the list of products?

Nicepage theme has no category page as in the default theme to output categories and subcategories only the list of products and categories inline.
You can add a Product Category tabs element to your Product list template and upload the new theme:
You can use Virtuemart modules to output the list of categories, positions that should be added to your theme templates.
