Is it possible for me to add media queries? And where would I add them?

Media queries (as any CSS code) can be added in Site/Page Settings ==> CSS.

I saw in another thread a few people requesting more screen sizes, is this something you will be doing soon?

Yes, we have added it to our wishlist but we cannot say for sure when exactly it will be implemented to Nicepage.

Clarify please, do you have horizontal scroll if you visit this website from the devices where this issue appears?
If yes, it means that these devices have 320px max viewport size. Nicepage doesn't support such width https://nicepage.com/doc/4011/supported-browsers, that's why horizontal scroll may appear.
