Please clarify: do you want to change the text inside the search bar or the icon? As for the text, you can't change it.
You can add an icon to the search bar, see screenshot below.

These plugins can be used to translate the theme. The Search element that was added to the Header and exported with Nicepage Theme into WordPress will be outputting the results of a search done by CMS (WordPress).

Add a plugin just for a word "Search" in the search box...I'm not sure I can do it...
