I prefer the hamburger menu symbol over a list of menu items regardless of screen size. Is there a way to make nicepage always show the hamburger menu even on large screens.

Yes. Click on the Menu then click on the 'Hamburger button' submenu in the panel on the right. You'll see a slider for the hamburger menu. Simply select it to cover all responsive modes. See attached screenshot showing the hamburger menu selected for three out of the five modes -just slide it to the left to cover all modes.
