I wanted to have placeholder text outside over the input box. I have weirdly been able to apply text above for one field only and I have no idea how I have been able to do it.. If anyone can help I would be really greatful.

You can try enabling the Field Labels in the Property Panel.

Please click on the corresponding field and check the right-side panel. You should now see the properties related to the specific control. Add the field label. This should help.
