how can I modify the menu police and color ?

All the menu options can be found in the right panel where you can see all the options for the Menu control. Just add a control, click on it and you will get the options on the right:

What if I have pages that have different color so for example I need my menu to be white on home page but in about I need it to be different color since my background is white ? How do I do this ?

On Nicepage, one Header is the same for all pages on a website. It cannot be changed on a single page. However, you can try using the "Header over Block" option. This option makes your Header transparent, and you can design the first Block which is under the Header.
