I am trying to edit individual item on the list, but it changes all the items.

In the case of Grid Repeater when you edit one Grid Item, all other items get the same styling automatically.
Try using the grid element and please see the screenshots.

Now we have a situation where...
I added block element from the library. (not creating from scratch. As shown in the video.)
and then to go to your suggested solution. we will have to convert to that grid repeater to something which you are telling me to use.(grid element.). So whatever changes we do, does not apply to all the cell.

Please guide me on how to change grid-repeater to grid-element. (Grid-element-02.png screenshot for "columns are different")

Unfortunately, there is no way. Please add a blank block. then add the grid, and then drag elements from the first item of the great repeater to the Grid's Cell 1. Other cells you will have to fill manually.
