I'm an absolute newbe, I am still in the trail mode, but it looks good, but I have to know how it works before I purchase the Ultimate
I build sites for clients, and they must be able to edit the content but not be able to change the layout. Is this possible, and how does that work?

In the trial mode, you can check the edit content option for pages with a plugin editor in Wordpress/Joomla. Your clients will have the same rights to edit content and will not be able to change the layout.

If I don't want to use Joomla or WordPress, can the client use the nicepage online editor?

A client license is for CMS-based sites.
There is no option to create a content editor for Online Builder yet.
