I have made 3 steps to try explain my needs, but, of course, if you have a better way to obtain the result let me know :-)
FIRST STEP : you can have two kind of ordering, with "PRE-ORDERING" or not, for the pre-ordering you have a counter that let you know how much pre-commad left before the reprint
SECOND STEP : if you want to pre-order and cic on the button under the item you can have a pop up with a form, with the name of the chosen item, then a form you enter, name, adress, and email and finally a button to pay
STEP 3 : on the counter you have one less on the item

Thanks for the explanation, I get it now. Nicepage does not have any option to do this counter. You can try to implement some custom script that will change the number in a box after each form submission.
