I just purchased the business license and I am wondering if we like this and wanted to upgrade to the pro would the money just spent apply towards the upgraded license?

In the first month, it's the difference.
After that, it's probably more since the year of updates is extended.
The green Upgrade/Extend button on the Premium page will explain.
