This solution only works in Nicepage program/website, not any more when you want to edit the theme in Wordpress.

That is correct. On the live site you can edit the content only. To edit the theme (Header is a part of the theme) you need to use the desktop application.

So way is there a button to change it, in the Wordpress plugin?
Also, when I convert an existing page to a Nicepage page, I do not get the default sticky header for it.

Please always open a new ticket so we don't spam the original user, ok?
The header is a part of the Theme, the Theme can be updated with your desktop application only.
Please choose the correct Theme settings for the Header, export the Theme only into your WordPress Site, choose the Theme to be the default, Theme settings would be applied only for pages using the Theme Template.
