when I set up a form mail, I always have the sender noreplay@nicepage.io.
How can I set it up so that the sender is displayed to me and not nicpepage

With the recent updates it became easy to set up the Contact form. If you do not wish to use our server as a sender, you can still choose other options for the contact form and set it up as you like.
