updating the software after the updates finish

You can install the last version before the updates end, after the end of the updates.
If you install a version later than that version after the updates end, it will revert back to the Starter version.

it will go to the version that first released or one version before the version let's say 3.20.3 and after 3.20.2? or the first version it is release for the first time

Let's say you have Nicepage desktop version 3.20 installed and the one year of free updates is over, if you updated the desktop app to a newer version, let's say 3.21, the program will work in a free starter plan.
If you leave your desktop app without updates after the free updates are over, you will be able to use the app with all the premium features.

if your are telling that after the end of period of updates so if for some reason i need to reinstall the application again the premium option will be lost this not fair cause i pay this software and to loose every thing i pay!

No, everything will be fine. When the free updates period ends, the link provided above will show the download links to the latest versions that were released before your free updates ended. So installing that version you will have the premium features.
