Hi, Elena.
If you need a "Form" with accepting the Privacy Policy checkbox, please create a "Contact Form" (you can design it as you wish).
After that, you will be able to add the "Accept Terms Checkbox" element inside "Contact Form."
If you need users to "accept cookies", we have a "Cookies Popup" block that you can add under the "Theme" menu.
For any other needs, we can only suggest using additional scripts.

Hi, thanks for your answer. Unfortunately all the options in the contact form seem to be not accessible (they appear in grey and can´t be selected), and the contact form I´m able to create only has name, e-mail, message and submit button.

Great that cookies pop-up is what you were looking for!
About "Form", you still can have the "Accept Terms Checkbox" field there.
You can see your created "Form" with name, e-mail, submit button.
Select your form, on the panel on the right you will see the "Add field" option - click on it.
After that, you will be able to add new fields to your form on the panel on the left (also you can manage or delete existing fields)
As soon as you add a new field you will see it inside your form
