1) Yes, you can switch the interface to the Italian language.
2) Please, specify what do you mean by the switch to the Online Builder? As Online Builder related to the separated package Web App With Hosting, and there's no synchronization between them. Even if you will buy an Online subscription still you would have the PRO Edition license for desktop.
3) With Web App with Hosting we host the websites for you, with the premium subscription you just need to assign a custom domain name to your websites. With the Designer App package for the desktop app, the number of websites is practically unlimited, as you are developing it on your hard drive, and then uploading it to some 3rd party hosting.

The online version is a completely different item from the desktop version.
It looks like you have the desktop version.
You need your own host.
