UTF-8 font problem

Hallo,
Nach dem Exportieren und Hochladen auf meinen Server werden nicht alle gegenseitigen Vokale korrekt angezeigt. (Deutsch) utf-8 - diese Kodierung kann ich leider auch nicht auswählen, da es diese nicht in der Liste gibt. Stattdessen nur Latin etc.
Was kann ich machen ?
