I would like to have a button called "Request Demo", when they click that it pulls up a modal and launches google appointment schedule. Is this possible? If so, how is it done?

Yes, you can add a modal popup to your Nicepage page opened by a button click.
You can add HTML element to your modal popup with embed code to your Google Calendar.
