There is no difference where you hist the files. The main reason to use YouTube may be if you need to have video controls in your videos, as when you use your own hosting, there will be o additional controls for the video as provided by YouTube.

It's up to you, that only depends on the video quality that you want to use, also note that huge video files may have delays in playing for the users with the slow internet connection.

Unfortunately I'm not experienced in working with videos, you can try to use YouTube as the shooting, probably they will optimize the video for you.
