I've noticed that the Nicepage plugin in WordPress does get updated, but not when the Whitelabel function is used.
When I rename the plugin, nothing happens with the version.

The plugin update with the White Label requires the re-export from the app. Please update the app, and re-export the content.

I've already done that. I uploaded the theme again, overwrote the old one, and cleared the cache.

So you have updated the desktop application to version 6, exported the new White Label plug-in, and installed it on the site and it does not have the functions of the new version? Could you please provide some screenshots demonstrating the problem?

So I'm doing this as part of the theme export. How can I export the individual plugin, Whitelabel, for example? Is that possible?

The plug-in can be exported from your application choosing the Plug-in option only:
Please then import the plug-in but do not install the content from it so you do not override the content on the site.
